Chuck’s Hop Shop, due to open at 21st and Union, was awarded its building permit on August 26th. The specialty beer shop could not proceed with alterations to the former Copymaster building until the permit was issued. They applied in late June, hoping for a late August or September opening. Now, though, that opening will be delayed further.
Now that the permit has come through, Chuck’s estimates about four weeks of construction remaining. They’re currently building a massive walk-in cooler and hope to be open by the end of October.
The long-awaited opening was originally hoping for a quick build out and a May opening. When it’s complete, the bottle shop will host food trucks, serve ice cream, and pour beer from 50 taps.

Glad to hear this is still a go. I was getting worried about the lack of obvious construction progress the last time I walked by. Can’t wait!
I add on 2-3 months anytime a new business opens up and estimates an opening date, especially when they have to build the entire space from scratch. with that place being vacant for the entire time I’ve lived here, I expected a quick build out to be a pipe dream.

Come on Chuck! I am planning on sharing my money between you and Standard Brewing for my weekly NFL beer consumption. Can’t wait until you open! I have some friends that are regulars at your other location and they just couldn’t be more pleased! Big welcome to the neighborhood!!
I hope they are planning on doing something with the exterior … only someone with very deft design skills could redeem that ugly building. Does anyone know what they have planned?
I wish the Seattle dept of planning and dev made it easier to open a business. Sometimes, I think they just want to make it difficult for no reason. I know i know rules regulations etc, but come on! When I was building out my bakery, they actually lost my plans. I feel for you chuck, but I know your going to make it happen!
I agree. They seem to make it as difficult as possible even in a neighborhood that desperately needs services. Standard Brewing, Central Pizza and now Chuck’s Hop Shop are all examples of struggling with all of the unknowns and the lack of support at the city. This leads to lengthy delays and costs money!
Back in the day, way way back that used to be a Pacific NW Bell telephone center. I remember going in there with my grandma.
